David Quain - Editor in Chief

Dr David Quain has been Editor in Chief of JIB since 2017 and publishing editor since 2023.  He joined the brewing industry in 1970 as a laboratory assistant at BIRF (now Campden BRI) before obtaining a BSc (Heriot-Watt University) and PhD (University of Liverpool).  He then worked at BIRF/Campden BRI, Bass/Coors/Molson Coors, Heriot-Watt University, University of Nottingham, the Institute of Brewing and Distilling (now Chartered Institute of Brewers and Distillers/CIBD) and in consultancy.  David is a Fellow and Cambridge Prize winner of the CIBD and a Honorary Professor of Fermentation and Dispense Technology at the University of Nottingham. He was awarded a DSc by Heriot-Watt University in 2025 for his thesis ‘Get the simple things right and the big things take care of themselves - Studies on brewing yeast, fermentation and draught beer: 1979-2025'. His current research focuses on the challenges of draught beer hygiene and quality, particularly the dispense of alcohol free beers. He has published 14 papers in JIB (1981-2023) and is co-author with Dr Chris Boulton of the book Brewing Yeast & Fermentation first published in 2001.
